RECIPE: Dragonfruit ice-blocks

Dragonfruits are lush and in season at the moment. Its striking red flesh will brighten up any fruit platter or salad. There are so many uses for dragonfruits. We love this dragonfruit ice-blocks recipe from our photographer, Maja Baska.
DRAGON FRUIT ICE-BLOCKS
Ingredients
1 ripe dragonfruit
1 lime juiced
Castor sugar or honey added to taste
4 tablespoons yogurt mixed with a teaspoon of sugar or honey (optional, add water instead if omitting yoghurt)
Method
Remove the dragonfruit pulp, it easily peels out from the skin when ripe.
Wizz up the dragon fruit, lime juice and sugar to taste.
Put the mixture in ice-block moulds and spoon in the yogurt.
Freeze and then slurp up.
A nice adult version of this is to add cointreau and tequila and make a margarita dragonfruit ice-block.
