RECIPE: Plum and Mint Cocktail

We have so many juicy plums in store at the moment. They have to be one of the most versatile fruits around. Our photographer, Maja Baska, likes to turn it into a syrup to use in drinks. Here, we use it in a Plum and Mint cocktail, perfect for a summers day.


PLUM AND MINT SYRUP

Ingredients

1kg of plum
1kg of sugar
bunch of mint

Method

Cut up the plums and macerate overnight in the sugar. Add the mixture plus the mint to a pot and gently simmer until the plums disintegrate. Strain out the syrup and store in fridge.

Tip: Continue cooking the plums (picking out the big bits of mint) to make a jam.


PLUM AND MINT COCKTAIL

Ingredients

30ml of gin
45ml of plum syrup
Ice and sparkling water to top up
Mint to garnish

Method

Add all ingredients to a cup and stir to combine.


Tip: An interesting twist on this is to add a pinch of salt and ground cumin, takes the flavours to a different dimension.
